Hello everyone,

We are going today for a super simple and easy recipe for chicken and cheese quesadillas. This recipe is one of my husband’s favourites, he may have asked me for it at least once a week for lunch, especially since our children don’t come home from school for lunch. So my husband takes this opportunity, so that I prepare these quesadillas with chicken and cheese as spicy as he can tolerate!!!

Personally, I go molo molo with the spice and with the cheese, but my husband likes it a lot, hihihih he still has Spanish roots!!?? Besides, with my husband, we can eat paella every 2 weeks, as often as possible a Spanish tortilla and churros.

This time, head to Mexico to make this very gourmet recipe for chicken and cheese quesadillas. I had prepared flour tortillas Admittedly, we put cheese in this recipe (full even) but personally I like the lighter version, you can see that towards the end of the video:

For the quessadillas (for 2 people)

  • 3 to 4 tortillas
  • 1 chicken breast cut into strips
  • spice for fajitas
  • salt
  • 1/2 onion very large cut into cubes
  • Red bell pepper green and yellow (1 half of each)
  • 1 clove grated garlic.
  • grated red cheese
  • grated cheddar
  • olive oil for cooking ingredients
  • butter for cooking quessadillas

For the fajita spice:

  • 1 vs. tablespoons cornstarch optional
  • 2 vs. teaspoon chili powder
  • 1 vs. teaspoon salt
  • 1 vs. teaspoon paprika
  • 1 vs. teaspoon sugar
  • 1/2 vs. powder onion optional
  • 1/2 vs. powder garlic
  • 1/4 vs. teaspoon Cayenne pepper
  • 1/2 vs. teaspoon ground cumin
  • Start by seasoning the chicken breast cut into strips with fajita powder and salt.

  • Cut the onion, and the peppers into cubes, sauté in one to 2 tablespoons of olive oil.

  • add minced garlic, salt and fajita powder.

  • when these ingredients are well cooked, remove from heat.

  • Fry the chicken strips in a little oil until fully cooked.

  • in a large skillet over low heat, melt 1/2 c. butter.

  • place a tortilla on top.

  • sprinkle over the two cheeses to cover well.

  • add a layer of the mixture, onion / peppers

  • add a layer of chicken.

  • decorate with a nice layer of cheese

  • cover with another tortilla, and turn using a plate as for an omelet.

  • place a little butter, and replace the quesadilla on the uncooked tortilla.

  • Let brown well then remove from the heat.

  • taste immediately.
