Hello everyone,

My kids and my husband love anything tortilla-based, and sometimes I make a dozen every two weeks so I don’t have to make them every week.

When the idea of ​​this recipe, I saw it on TV on the program: My kitchens rules Australia… The candidates had to prepare recipes that must appeal to children… one of the couples had made these baskets of burritos at chicken. My children watched of course with the program and they asked me to make them…

I immediately noted the recipe while the candidates were explaining it, I don’t know if I noted everything, but in any case the result was a real delight, my children liked it very much, they ate 3 each …

for the sauce:

  • 2 vs. soup mayonnaise
  • 1 it’s soup fresh liquid cream
  • 1 drizzle of lemon
  • 1 pinch of salt

for the chicken:

  • 1 chicken breast cut into 2cm cubes
  • 1 tsp of cumin powder
  • 1/2 vs. coffee from coriander powder
  • 1/2 tsp of sweet paprika
  • 1/2 vs. coffee dried oregano
  • salt and pepper to taste
  • soup spoons olive oil
  • 1/2 finely chopped red onion
  • a few slices of red pepper cut into 1 cm pieces
  • a few slices of green pepper cut into 1 cm pieces
  • a few slices of yellow pepper cut into 1 cm pieces
  • 1 crushed garlic clove
  • 2 tb medium matte finely chopped
  • 1 nice handful of corn drained
  • Preheat the oven to 180°C. Spray a 12-cavity muffin pan with olive oil.

  • cut from each tortilla, 3 slices of almost 9 cm in diameter,

  • Insert the tortilla rounds into the cavities, and oil the inside again

  • Cook for about 7 minutes or until lightly browned, watch as they may puff up a bit, just press down with a spoon again to give them the shape of the cavities.

For the chicken,

  • combine chicken, spices and oregano in a bowl.

  • Heat 2 teaspoons of the oil in a large saucepan. Cook the chicken until it is golden brown. Put aside.

  • add a little more oil to the same pan. Sauté the onion until very soft.

  • Add the pepper cubes and garlic. Cook, stirring occasionally, for about 5 minutes.

  • Add tomatoes and corn kernels. Let simmer, covered, for 15 minutes. Add the chicken, simmer a little until the sauce has reduced completely.

  • For the assembly, take the baskets of tortillas, place a little grated cheese at the base.

  • Top each basket with salad.

  • add the chicken mixture, a little of the sauce, another cheese and finally the chives. Serve with guacamole.
