ftirates, Algerian cakes with icing

Here is a very delicious Algerian cake the ftirate (ftiyrate, ftirates, ftirate)… and I will be very frank, it is a cake that I did not know at all, until one of my readers came for me ask for the recipe, I told him then, yes I will get it for you, and at the same time, try to know more about this Algerian cake…
So I immediately walked over to my friend Ratibabecause she is her mother, know a lot about Algerian pastry, and of course she had the recipe….
ftirates, Algerian cakes with icing, Christmas cookie
for the cookies:
- 3 measures of flour I used a 160ml glass
- 1 measure of lukewarm melted butter.
- almost 1 measure of the water + orange blossom water mixture
- lemon zest
- 1 egg white
- 1 vs tablespoon orange blossom water
- 1 vs lemon juice
- 1 vs oil
- icing sugar
Preparation of cookies
In a bowl, sift the flour and add the measure of melted and cooled butter.
Rub with your hands so that the flour absorbs the butter, and then pass through a sieve so that the mixture is well incorporated.
Gradually add the water and orange blossom water mixture and scoop the dough into a ball without kneading it.
Cover and let stand for twenty minutes.
Roll out the dough using a rolling pin and use a cookie cutter of your choice to cut shapes of your choice (my daughter had a lot of fun with this step).
with another small cookie cutter, make a hole in the cupcake
bake for 10 to 15 minutes in a preheated oven
place the egg white in a large bowl and mix it gently with a fork
add the orange blossom water, lemon juice and oil.
Add the icing sugar very slowly using a tablespoon while mixing until you get a very thick cream.
Test with a cake, if the icing is too thick, add a little orange blossom water and if it is too liquid, add icing sugar.
Glaze all your cakes and let them air dry completely before placing them in an airtight container.
