for the cookies:

  • 3 measures of flour I used a 160ml glass
  • 1 measure of lukewarm melted butter.
  • almost 1 measure of the water + orange blossom water mixture
  • lemon zest


  • 1 egg white
  • 1 vs tablespoon orange blossom water
  • 1 vs lemon juice
  • 1 vs oil
  • dye
  • icing sugar

Preparation of cookies

  • In a bowl, sift the flour and add the measure of melted and cooled butter.

  • Rub with your hands so that the flour absorbs the butter, and then pass through a sieve so that the mixture is well incorporated.

  • Gradually add the water and orange blossom water mixture and scoop the dough into a ball without kneading it.

  • Cover and let stand for twenty minutes.

  • Roll out the dough using a rolling pin and use a cookie cutter of your choice to cut shapes of your choice (my daughter had a lot of fun with this step).

  • with another small cookie cutter, make a hole in the cupcake

  • bake for 10 to 15 minutes in a preheated oven


  • place the egg white in a large bowl and mix it gently with a fork

  • add the orange blossom water, lemon juice and oil.

  • Add the icing sugar very slowly using a tablespoon while mixing until you get a very thick cream.

  • Test with a cake, if the icing is too thick, add a little orange blossom water and if it is too liquid, add icing sugar.

  • Glaze all your cakes and let them air dry completely before placing them in an airtight container.
