The taste stayed in my mouth to this day, And I have to thank this time Lunetoiles who sent me a while ago, a nice gift box with calissons, containing a book with lots of recipes variety of sweet and savory calissons » Homemade Calissons sweets & aperitifs” by José Maréchal, 4 cookie cutters of different sizes, a spatula, and a mini rolling pin. It doesn’t stop there, but she also sent me candied fruits, such as candied melon, candied kiwi, candied kumquats,….the list is long to name everything. I can’t find candied fruits here at home.

The most important thing is that these gifts from Lunetoiles allowed me to make calissons to suit all tastes, and above all, to make home-made calissons from Aix. Besides, since my daughter ate it, now she keeps asking for calissons, and what’s more, she’s the one who chooses the recipe from the photos in the book, before she asked for arayeches a lot.

One important thing that I must tell you, I don’t use unleavened sheets to make my calissons, I use rice sheets instead, I haven’t come across good quality rice sheets yet because they are a little thick, which makes making pieces of calissons a little hard, and the other thing, I don’t know what the unleavened sheets are called in English to buy them, lol.

  • 160 gr candied orange melon
  • 50 gr candied ginger
    Not having candied ginger at home, I replaced candied ginger and honey.

  • 1 sheet of unleavened paper rice paper

for the icing

  • 150 gr icing sugar
  • 35 gr egg white about 1 white
  • 1 vs teaspoon of lemon juice
  • 1 tip of cream color dye
