Hello everyone,

Who doesn’t love Mexican nachos? At home my children love it, I admit that sometimes I just buy store-bought nachos that I broil for a few minutes in the oven with a little cheese and tomato sauce, I add a little guacamole to my plate, children prefer without, and here we are for a nice plate to snack on while watching a movie together, or to serve on an aperitif buffet

Nacho chips are extremely good and can be enjoyed in many ways, whether with a tomato salsa, a kiwi salsa or with a creamy Gruyère sauce. And when those nacho chips are homemade, you can enjoy them guilt-free and without moderation because you know what’s in them.

Since I discovered this recipe for homemade nachos with fajita spices, I make it very often, and the children ask me for them all the time. It makes me happy to see them nibbling in a bowl of homemade nacho chips than to see them eating these commercial chips, we don’t even know how it’s prepared!

The nacho chips are a treat, they are so crispy and the taste of the fajitas spices is unmissable and what makes the taste of the corn chips distinct is the combination of the white flour and the cornflour Plus it’s a super easy recipe to make.

In my recipe today, I put fajita spices, but you can flavor your nacho chips according to your taste. In addition I preferred to cook in the oven instead of frying them and they are too good.

How to make cornmeal nacho chips?

I can’t tell you how much this recipe for nacho chips is easy:

– We will combine and knead the mixture of corn flour, white flour, oil, salt and fajita spices for a few minutes, adding a little water to scoop the dough into a ball, for my part I do this in the Thermomix, you can prepare the dough by hand, as you can do it in the food processor.

We add little ordinary flour because corn flour is gluten-free and does not have this quality of being able to spread it, suddenly it will break easily when rolling it and the ordinary flour will help to give this little gulten to spread the dough as finely as possible.

– Knead the dough until it becomes soft without being sticky, cover with cling film and chill for at least 30 minutes.

– spread the dough on baking paper so as not to have to add flour to the work surface. I just use a rolling pin for that.

– cut the dough into triangles of almost 4 cm on each side, it is easier to do this with a pizza wheel. Then take a fork, prick them so they don’t swell and come out crispy.

– You can either fry the triangles, or arrange them on an ovenproof dish and cook for 10 to 15 minutes depending on the capacity of the oven.

To conserve homemade Mexican nacho chips, you can place them in an airtight box and store them for easily 15 days. It’s a perfect snack for children if you don’t add hot spices in the preparation!

  • 100 g of wheat flour
  • 100 g of corn flour
  • ½ vs. coffee salt
  • 60 gd’ olive oil
  • 85 gd’ water
  • 1 vs. coffee fajita spice mix
  • 2 pinches of cayenne pepper powder to adjust according to taste
  • 1 vs. coffee paprika
  • 2 vs. coffee flower of salt
  • Put the wheat flour, corn flour, salt, olive oil, water, Mexican spice mix, cayenne pepper and paprika in a large bowl

  • pick up and knead the dough to have a nice soft dough that is easy to work with.

  • form a ball, wrap in cling film, then refrigerate for about 30 minutes.

  • Preheat the oven to 180°C (Th. 6).

  • Line 2 baking sheets with baking paper and set aside.

  • Unwrap the dough and roll it out thinly with a rolling pin.

  • Cut triangles of dough (4 cm) with a knife, then place them on the prepared baking sheets.

  • Sprinkle with fleur de sel, then put in the oven and cook for 10-15 minutes at 180°C, watching for the colouring.
