At home the mkhabez with almonds remains the favorite, I must not do anything else, especially since it is at the request of my daughter that I do it, so I have no interest in changing or putting anything other than almonds . She accepts that I put nuts in it, or even hazelnuts, but no more.

If I have to use coconut, it’s mostly in no-bake cakes, my kids prefer coconut like this because they find it’s less dry, like for:

  • 3 coconut measures
  • 1 measure of granulated sugar
  • 1 the zest of a lime lime
  • a few drops of lemon juice
  • 1 vs. vanilla coffee
  • 1 egg + egg yolk


  • 2 egg white more or less depending on the quantity of cakes
  • 3 vs lemon juice
  • 5 vs s orange blossom water
  • 1 vs. honey or table oil for shine
  • white dye
  • between 500 and 700 g of icing sugar


  • Sugarpaste
  • white dye + pearlescent dye
  • cake stencil
  • place the coconut, sugar and lemon zest in the mixing bowl and blend into a finer powder. (if your coconut is not new, it may shed its oil, so add a tablespoon of flour.

  • place the powder mixture in a large bowl, add a little lemon juice

  • pick up the dough with an egg, and if the dough does not pick up well, add egg yolk. Personally, I pick up the dough between two cling film, I press it continuously until I have a nice dough.

  • Roll out the dough on a lightly floured work surface to a height of about 2cm.

  • bake in a preheated oven at 160°C for about 15 minutes.

Prepare the frosting:

  • Prepare the icing with the ingredients mentioned above, it should not be runny or too thick,

  • always test on a cake and rectify by adding icing sugar until you obtain the desired texture.

  • let the frosting dry, then prepare the decoration.

  • spread the sugar dough, place the stencil on it, spread again with the rolling pin, so the design will stand out.

  • Still with the stencil on, use the brush to apply the blue color and the pearly color.

  • remove the stencil, then cut roundels the same size as the mkhabez

  • pass a little egg white on the mkhabez and glue the round of sugar paste.
