Hello everyone,

I always bring sunshine to my table and this time it’s with this salad of red cabbage, smoked tofu and carrots seasoned with a vinaigrette based on a Thai sauce that I added lots of color to the meal table evening to accompany baked chicken drumsticks. Too bad my last two had found this salad a bit spicy and so they preferred mashed potatoes instead.

This red cabbage and tofu salad is very rich in taste and flavors, each bite will encourage you to take another because each time you will discover more textures and flavors, you have the freshness of carrots and pieces of red cabbage, the fragrant flavor of melt-in-the-mouth smoked tofu, the sweet-salty of a vinaigrette that starts sweet in the mouth and gives more and more of that strong taste of chilli. It doesn’t stop there, because the roasted peanuts add a lot of crunch to this salad. What a delight!

I fell for this salad of red cabbage, carrots and smoked tofu the day I saw it at Martina from the blog kilometer-0. After reading the recipe and the steps to make it, I had every flavor in my mouth, and I was just trying to taste what the combination of these ingredients would give. Verdict: a explosion of flavors!

How to prepare the detox salad with red cabbage?

– Peel a piece of ginger and grate it into a large bowl. Add the soy sauce, Thai sauce and oil, mix well.

Small note: if like me you made the homemade Thai sauce with the dried red pepper flakes, heat it just a little, and pass it through a sieve so as not to have too many pepper seeds in the sauce, that’s what pushed back my two children didn’t want to eat the salad, they were afraid it was too spicy.

– Cut the smoked tofu into small cubes, add them to the ginger vinaigrette and Thai sauce. Combine well and refrigerate while you prepare the rest otherwise I promise you one thing, I liked it so much I ate almost half before adding the rest of the ingredients, grrr!

– Wash and dry the red cabbage then cut it into slices with a large knife and thinly slice it. Personally I buy here in England a small red cabbage whose leaves are tightly packed and which is well wrapped, so it is very clean inside. On the other hand in Algeria, as the red cabbage that I buy is organic from a farmer in the region, I wash it first when it is whole, I cut it into strips, which I wash again to make sure all dust and small insects fall back into the water. Then I let it drain well before adding to the preparation.

– Scrape the carrots and cut them into thin sticks, add to the tofu and red cabbage salad bowl.

– Mix well so that everything is impregnated with the sauce. If you find that you have not added enough sauce, prepare a little more sauce and add to the salad. Keep it in the fridge until ready to serve, know that you can prepare it in the morning for the evening, or prepare it a day in advance.

– At the last moment, wash and dry the parsley. Chop it up and sprinkle over the salad. Add the peanuts. Serve immediately.

What’s a substitute for smoked tofu?

Tofu and whatever its form: firm tofu, silken tofu, lactofermented tofu or smoked tofu, it takes the place of animal protein. So if you don’t like tofu, or you can’t find it at the store, you can replace it with chicken, turkey breast, bacon.

If you are vegetarian or vegan, you can replace the tofu with minced soy, soy protein, tempeh or even seitan.
