Hello everyone,

The red cabbage salad with apples and tahini is a side salad that I really loved, especially the sweetness that the tahini dressing sauce brings. This delicious, crispy salad with sweet and sour flavors is a good idea for an evening meal and adds a lot of color and freshness to the menu, its taste will delight you!

Since I discovered salads that combine vegetables and fruits, I became addicted to them, they are always among my Ramadan recipes and I must try a version at least once a week, and the ingredients of this salad go extremely well together: the red cabbage brings a strong and sweet side, the apple and the pomegranate add the juicy crunch and the sweet and sour, the crunchy walnuts bring the nutritional richness and the perfume of the forest and the vinaigrette between the sweetness tahini and the sweetness of honey and the tangy taste of apple vinegar will take you to another world.

Unfortunately this vinaigrette was not to my husband’s taste who preferred the pomegranate molasses vinaigrette.

This Red Cabbage, Apple, Walnut, Pomegranate Salad with Tahini Vinaigrette Sauce is super easy to make and consists of just 4 main ingredients: red cabbage, pomegranate seeds, apple and walnuts.

For other variants:

– Instead of pomegranate seeds, you can substitute with dried cranberries or raisins

– Instead of nuts you can put pecans or peanuts.

– For the apples, I like to put sweet gala type apples, because if you use slightly acidic apples, it won’t be easy to adjust the taste of the salad.

When I make this salad to enjoy right away, I grate the apples, it adds a lot of tenderness and juiciness to the salad, but as for this time, I made this salad to take with us, I cut the apples into strips, I just used a knife, because I was too lazy to get my mandolin in the garden cabin in this cold.

For the vinaigretteit was a discovery for me, a vinaigrette that my friend the Sudanese often makes and I admit that personally I can taste it with just a piece of bread, especially if you combine the right doses, and there each one what he prefer, more sweet, more tangy, or more fat!

The dressing is made with: homemade tahini, extra virgin olive oil, honey, cider vinegar and a little salt to balance the flavors.

Other variants:

– If you don’t like the sesame puree or don’t have any, you can simply remove it, as you can add a spoonful of peanut butter or almond butter.

– In my friend’s original sauce recipe, there is sesame oil, personally I didn’t have any.

– Vinegar is a matter of taste, I always have cider vinegar or apple vinegar, and when I find the opportunity to put it in a dish or a salad I don’t hesitate. You can replace with white vinegar, balsamic vinegar…

– Honey adds a lot of richness and that perfect sweetness, you can substitute with maple syrup, agave syrup, or pomegranate molasses, but in the latter case, you won’t need to put any vinegar.

  • 1/2 Red cabbage medium chopped
  • 1/2 grenade
  • 1 sweet apple big enough
  • 1 handful of nut

For the tahini vinaigrette

  • 4 vs. tablespoons cider vinegar
  • 1 vs. tablespoons Honey
  • salt
  • black pepper
  • Cut the red cabbage into thin strips (as thinly as possible). You can also shred it in a food processor, but I’ve found the best way to do this is by hand or on a mandolin.

  • Grate the apple on the large holes of a grater with the skin or pass on the mandolin

  • Remove the seeds from the pomegranate fruit.

  • Mix all the salad ingredients.

  • Prepare the vinaigrette with the given ingredients,

  • water to taste at least 30 minutes in advance
